This Keto Cheesy Cauliflower Casserole is creamy, cheesy, and loaded with flavor, making it one of the best keto dinner recipes for families. It’s a delicious substitute for mac and cheese, using cauliflower as a low-carb base that pairs perfectly with melted cheese and bacon.
Ingredients:
- 1 large head of cauliflower, cut into florets
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup cream cheese, softened
- 4 slices bacon, cooked and crumbled
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh chives for garnish
Instructions:
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- Steam the cauliflower florets until tender, about 5 minutes. Drain well and pat dry.
- In a large bowl, mix together sour cream, cream cheese, garlic powder, salt, and pepper.
- Stir in the cauliflower, half of the cheddar cheese, and crumbled bacon.
- Transfer to the baking dish, top with remaining cheese, and bake for 20-25 minutes, until bubbly and golden.
- Garnish with fresh chives and serve warm.
