This Chicken and Wild Rice Soup is hearty, comforting, and packed with lean protein and fiber-rich wild rice. It’s the perfect healthy meal for a chilly day or when you need something nourishing and wholesome.

Ingredients:

  • 1 cup cooked wild rice 
  • 1 lb boneless, skinless chicken breasts, shredded 
  • 1 tablespoon olive oil 
  • 1 small onion, diced 
  • 2 carrots, diced 
  • 2 celery stalks, diced 
  • 4 cups chicken broth 
  • 1 teaspoon thyme 
  • 1 bay leaf 
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, cooking for 5 minutes until softened.
  2. Add the chicken broth, thyme, bay leaf, and salt and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  3. Stir in the shredded chicken and cooked wild rice, and simmer for another 5-10 minutes until the flavors meld.
  4. Remove the bay leaf, serve warm, and enjoy.
