If you’re looking for a meal that’s both healthy and packed with protein, this Chicken and Quinoa Power Bowl is perfect. This dish combines lean chicken, nutrient-dense quinoa, and fresh vegetables to create a satisfying and nourishing meal. It’s easy to make, customizable, and provides a fantastic protein boost to keep you energized throughout the day.

Chicken and Quinoa Power Bowl Recipe

Ingredients:

  • 1 cup quinoa, rinsed (See price on Amazon)
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil (See price on Amazon)
  • 1 teaspoon garlic powder (See price on Amazon)
  • 1 teaspoon smoked paprika (See price on Amazon)
  • Salt and pepper to taste 
  • 1 avocado, sliced 
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced 
  • Fresh parsley for garnish 
  • Lemon wedges for serving

Instructions:

  1. Cook the Quinoa: In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is fluffy and the water is absorbed. Set aside.

  2. Cook the Chicken: Season the chicken breasts with garlic powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-8 minutes on each side, or until cooked through. Let the chicken rest for 5 minutes before slicing.

  3. Assemble the Bowls: Divide the quinoa between two bowls. Top each bowl with sliced chicken, avocado, cherry tomatoes, cucumber, and fresh parsley.

  4. Serve: Garnish with lemon wedges and an extra drizzle of olive oil, if desired. Enjoy this protein-packed, healthy meal!
