For a healthier, low-carb alternative to traditional mashed potatoes, try these Cauliflower Mashed Potatoes. They’re creamy, buttery, and just as satisfying without the starch and calories of regular potatoes.
Ingredients:
- 1 large head of cauliflower, cut into florets
- 2 tablespoons butter or ghee
- 1/4 cup unsweetened almond milk (or your preferred dairy-free milk)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh chives for garnish
Instructions:
- Steam or boil the cauliflower florets until they are tender, about 10-12 minutes.
- Drain the cauliflower and transfer to a food processor. Add butter, almond milk, garlic, salt, and pepper.
- Blend until smooth and creamy. Adjust seasoning to taste.
- Serve with fresh chives sprinkled on top.
