This Lemon Garlic Shrimp with Zucchini Noodles is a quick and refreshing dish that’s loaded with protein and low in carbs. The zoodles (zucchini noodles) make a fantastic pasta substitute, and the lemon-garlic combo brings a burst of flavor that’s hard to beat.
Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 medium zucchinis, spiralized into noodles
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and fully cooked. Squeeze half of the lemon juice over the shrimp and season with salt and pepper. Remove shrimp from the skillet and set aside.
- In the same skillet, add the remaining olive oil and zucchini noodles. Sauté for 2-3 minutes until slightly tender, then add the rest of the lemon juice.
- Serve the shrimp over the zoodles, garnish with fresh parsley, and enjoy!
