These Paleo Banana Pancakes are a naturally sweet, gluten-free breakfast option that kids will love. They’re made with simple ingredients and can be topped with fresh fruit or almond butter for extra flavor.
Ingredients:
- 2 ripe bananas, mashed
- 2 eggs
- 1/4 cup almond flour
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- Coconut oil for cooking
Instructions:
- In a mixing bowl, combine the mashed bananas, eggs, almond flour, cinnamon, and vanilla extract.
- Heat a bit of coconut oil in a skillet over medium heat.
- Pour small amounts of the batter into the skillet to form pancakes, and cook for 2-3 minutes on each side until golden brown.
- Serve with fresh fruit or a drizzle of almond butter.
