This one-pan meal is hearty and full of comforting flavors. The combination of ground beef, sweet potatoes, and fresh herbs makes it a perfect paleo-friendly dinner.
Ingredients:
- 1 lb ground beef
- 1 medium sweet potato, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Heat olive oil in a large skillet over medium heat. Add the diced sweet potato and cook for 8-10 minutes until tender. Remove and set aside.
- In the same skillet, cook the ground beef with onion and garlic until the beef is browned and the onion is soft.
- Add the sweet potato back to the skillet, along with smoked paprika, thyme, salt, and pepper. Stir well to combine.
- Cook for another 2-3 minutes to meld the flavors. Garnish with fresh parsley and serve warm.
