These stuffed bell peppers are loaded with savory ground beef, tomatoes, and spices, creating a flavorful and paleo-friendly meal.
Ingredients:
- 4 large bell peppers, halved and seeds removed
- 1 lb ground beef
- 1 cup diced tomatoes (no added sugar)
- 1/2 small onion, diced
- 1 clove garlic, minced
- 1 tsp oregano
- 1 tsp chili powder
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C). Arrange the bell peppers in a baking dish.
- Heat olive oil in a skillet over medium heat. Cook the ground beef with onion and garlic until browned.
- Stir in diced tomatoes, oregano, chili powder, salt, and pepper. Cook for another 2-3 minutes.
- Fill each bell pepper half with the beef mixture. Cover the dish with foil and bake for 25-30 minutes, or until the peppers are tender.
- Serve warm and enjoy.
